Matt Whiley, one of the world’s most celebrated mixologists, is already working on the drinks list for the antipodean version of his award winning Scout London.
Scout will take up permanent residence on the top floor of The Dolphin Hotel in Surry Hills.
Patrons of Scout can anticipate the recently awarded European Bartender of the Year Matt Whiley to offer the trademark tongue-in-cheek offerings that have been part of Whiley’s contribution towards transforming the world’s drinking and cocktail culture.
Whiley’s creativity famously blurs the line between cocktail, wine and drink, so Sydney-siders will soon become familiar with beverages like orange “wine” (made with fermented orange, mandarin and cumquat), aged in oak barrels, or banana “wine” (bananas are roasted, juiced, and finally fermented with wattle seed and macadamia – producing a rich banana, chocolate, nutty, fruit wine). They’ll sit alongside more familiar drinks like espresso martinis or vodka and soda, all imbibed with a Scout twist.
